Upon arrival at Launceston Airport, your private driver-guide welcomes you and escorts you into the gentle rhythms of northern Tasmania. Begin with a leisurely lunch at a winery, where the menu showcases the region’s elegant produce amid vine-covered hills. In the afternoon, join Wallaby Walkabouts for a two-hour walking journey through Launceston’s layered history, its colonial architecture and riverside charm unfolding at a contemplative pace. As evening settles, check into the refined Stillwater Seven hotel or similar and savour a carefully composed three-course dinner — the perfect overture to the days ahead.

Day 3 – Through the Dramatic Amphitheatre of Cataract Gorge to the Refined Vineyards of the Tamar
After breakfast, board the Tamar River Cruises for an Adventure Cruise through the dramatic cliffs and cascading waters of Cataract Gorge. Afterwards, journey into the Tamar Valley’s celebrated wine country. At Swinging Gate Vineyard or similar, sample distinctive local expressions before sitting down to a refined two-course lunch at Evenfall Vineyard or similar. The afternoon culminates at world famous Moores Hill Estate or similar with a thoughtful wine and cheese tasting, allowing the valley’s character to linger on the palate. Day 4 – Truffle Hunting & A Nocturnal Encounter with the Tasmanian Devil
Depart after breakfast for the high country, pausing first at Christmas Hills Raspberry Farm or similar for a simple morning tea (at guests' own expense) amid fragrant rows of fruit. Day 5 – Explore the Tasmanian's Natural Beauty & Arrival at the Sanctuary of Saffire Freycinet
After breakfast, set out into Cradle Mountain–Lake St Clair National Park for a morning of walking at Dove Lake or along tracks of your choosing, where ancient rainforest, glacial lakes and the distinctive silhouette of Cradle Mountain create a landscape of profound stillness. Begin the scenic transfer eastward after lunch, arriving in the late afternoon at Saffire Freycinet. Day 7 – East Coast to Hobart
After a final breakfast overlooking the peninsula, depart Saffire and travel inland through rolling countryside, pausing for morning tea in the historic village of Campbell Town. Arrive at Callington Mill Distillery for a guided tour and tasting of their exceptional single-malt whiskies, followed by lunch (at guests' own expense) at your leisure. Continue south to Hobart, check into the elegant The Tasman, a Luxury Collection Hotel.

Day 8 – Gastronomic Delights of Tasmania
This morning is devoted to Tasmania’s most distinctive producers. At Hartshorn Distillery and Grandvewe, experience “The Whole Shee(p) Bang” — an immersive journey through sheep’s milk cheese, unique spirits and the stories behind them. Continue to Barilla Bay for a shared seafood platter lunch of exceptional freshness, followed by a private tour of the oyster farm. In the afternoon, visit Candy Abalone farm for an insightful tour of this renowned abalone operation.

Day 9 - Treat Yourself With a Seafood Cruise Journey
Embark on a gastronomic journey with a half-day special seafood cruise. Enjoy a range of local Tasmanian produce and local beverages, including: Wild Abalone, Rock Lobster, Oysters,Salmon,Sea Urchin etc. In the afternoon, ascend kunanyi / Mount Wellington, pausing for coffee at Lost Freight Café before reaching the summit lookout for sweeping views across Hobart and the distant coastline.
